This recipe was created by Bill O'Hagan after finding inspiration in Samuel Pepys diaries .. In Samuel Pepys diary written in the 17th Century was a mention of Pork and Spinach sausage. O'Hagan's version is full of fresh local spinach and herbs.
Ingredients: 75% pork, 15% spinach, oats, water, herbs, salt and pepper.
